Christmas morning Hash Brown Casserole by T. Lee Garland

Evernight authors are cooking and sharing recipes all month long. Author T. Lee Garland has the perfect Christmas breakfast and the perfect book for your holiday break!

Christmas morning at my house is all about a large southern family breakfast. We love this easy hash brown casserole that can be assembled the night before and pulled from the fridge and placed in the oven to cook while we open our presents.

Christmas morning Hash Brown Casserole

2 pounds of frozen shredded hash brown potatoes

1/2 Cup soft butter

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chopped onions

1/2 Cup sour cream

1 can Cream of Chicken soup

2 Cups shredded Cheddar Cheese

Preheat oven to 350 degrees and spray or butter a 9 x 13 pan.
Stir butter sour cream and soup until well mixed before adding remaining ingredients.
Mix all together and pour in sprayed/buttered pan.
Bake uncovered 40-45 minutes until golden brown.
Will feed 8-10.

LILY'S LONER

Lily is on her first assignment as a reporter. She's also a cougar shifter. Her job is to infiltrate a cult run by a mad man. When she witnesses the murder of two followers she runs for her life to her older brother. Ben is a special-ops soldier, who is determined to protect his sister, but his wife is expecting their first child and he fears he can’t give Lily the security she needs. So he drives her to his former CO and asks Max to protect his sister.

Max is a cougar and a loner and he likes it that way. He lives on top of a mountain in a cabin away from those who would be horrified by his scars. He takes one look at Lily and knows she is meant to be his mate. But first he has to protect her from those who want her as their own.

Author bio:

One of my first memories as a child is my beloved Uncle Roy giving me a Little Golden book for my Birthday. That's all it took, I was hooked on reading. I read my first romance book at seventeen and I have never looked back. I love a character with a sense of humor and a bad boy who doesn't know how good he really is. As a matter of fact I married one! I love writing strong female characters who know what they want and aren't afraid to go after it. I enjoy getting to share the characters in my head with others. I aspire to write bad boys as well as Anne Stuart, whose Ice Series is one of my all-time favorites.

I'm a widow now and I share my Tennessee home with a hundred Barbies, countless books and movies, a rescued beagle named Samwise Gamgee (Sammie for short) and a plump, elderly cat named Coco. I am most proud of my two sons and the beautiful, talented ladies they married.

And in case you were wondering about that Little Golden book it is still one of my most priceless treasures...forty-seven years later.
