Snowball Delights Recipe from Casey Moss

The following recipe is one my mother used to make around the holidays. Now, I tend to make a few batches between Thanksgiving and New Years as the cookies normally get eaten pretty quickly.

Snowball Delights

Recipe: A moist, rich date cookie made in a skillet

2 Eggs

1 Cup Sugar

½ Tsp. Salt (Opt.)

1 ½ Cups Chopped Dates

½ Cup Coarsely Chopped Nuts (Opt.) (Walnuts usually used)

½ Tsp Brandy OR Vanilla Extract

4 Cups Corn Chex OR Rice Chex Cereal Crushed To 2 Cups

1 Cup (Or More As Needed) Flaked Coconut

Beat eggs slightly in a large skillet. Add sugar, salt (opt.), and dates. Mix well. Cook over low heat, stirring constantly until dates are soft and mixture is thick (about 10 to 12 minutes). Remove from heat. Stir in nuts (opt.) and extract. Add Chex. Mix well. Let mixture cool. Drop from teaspoon onto coconut and roll into balls about 1 ¼ inch in diameter.

Store loosely covered or freeze

Makes about 4 dozen (1 ¼ Inch) cookies
